I'm talking about the score, I think that's what you call it.
My top 3 is:
The Thing
Ravenous
13th Warrior
all of those are great atmosphere builders while writing Mythos pieces and they give you goosebumps.

If we're talking about the scores, then Transformers: The Movie; Escape From New York and DOOM (the game, that is) are amazing for atmosphere.

From what I remember, it opened with a synthesized version of Dies Irae, and also had an excerpt from Bartok's Music for Strings, Percussion and Celesta. What other music did it have?

Do you read the book? I think is one of the good things that S. King has written.
I love The Thing (Carpenter), and The Fly.

i don't know much classical/orchestral music by name, but a quick google search confirmed your recollections..
here's a page dedicated to the composers featured in the movie

All I can remeber about the book(I read it when I was 11) was that the black guy doesnt get an ax in his back.

Does the soundtrack for the 13th Warrior have the funeral chant on it? Cause I'd buy that for a dollar.
Lo, there do I see my father
Lo, there do I see my mother and my sisters
and my brothers
Lo, there do I see the line of my people back
to the beginning
Lo, they do call to me
They bid me take my place among them
in the Halls of Valhalla
Where the brave may live forever...
Bring me my sword...
