I would like to see Apple improve the "Create Event" from an email feature. What I would specifically like to see is support for adding a location automatically, maybe using "@" or "at" in the subject line. Like this:
Subject: Awesome Party @ Your House
12/31/2010 8PM
When I receive this email, it would put the "Awesome Party" event on my calendar, with the location "Your House", on 12/31/2010 at 8PM...
So simple. Surprised the geniouses at the genious bar have not thought of it...

p.s.: They could also add a "Notes" key word that would allow additional details to automatically be added to the "Notes" section in the calendar notice. Also very simple...
